Aïn Bourdaï, Baalbeck Region, North Bekaa Hills at the Western Slopes of the Anti-Lebanon… Altitude 1500m (On average!) which slows maturity and optimizes the sugar / acidity balance… Major exposure South –Ouest; Soil shallow in the rocky spots, calcareous (lime stone), pebbles and clay in some plots! Isolated terroir which favours the organic feature, being very distant from other vine cultures (low contamination with parasites and diseases)! Slopes, steep, preserved as is, favouring natural drainage and the poor structure in surface, forcing the roots to search deep layers for minerals, helping increase the freshness, maintain the wines colours, aromas development and vines hygiene…

For a total quantity of 4.000 bottles…
2- Winemaking
Low temperature press; Tank fermented, at low temperatures as well for a maximum freshness in the make 15 ˚C to 17˚C, cold & static settling of the must. No Malo-Lactic, tartric precipitation, mild filtration and stabilisation, very low sulphur content…
3- Tasting Notes (Jan. 2023)
Robe clear, light body, yellow robe, very fresh.
Nose 1st nosing jasmin and white flowers, with flesh fruits;
Palate Revealing more than a generic Viognier! White peach, also pears and white pepper hints… Lingering and mineral.
4- Serving Temperature & Hints…
10˚C to present better its acidity structure.
5- Food Pairing
Sea food, oysters, Special summer meals, by the sea! From a aperitif onward a pleasant companion, a must to try!
