Aïn Bourdaï, Baalbeck Region, North Bekaa Hills at the Western Slopes of the Anti-Lebanon… Altitude 1500m (On average!) which slows maturity and optimizes the sugar / acidity balance… Major exposure South –Ouest; Soil shallow in the rocky spots, calcareous (lime stone), pebbles and clay in some plots! Isolated terroir which favours the organic feature, being very distant from other vine cultures (low contamination with parasites and diseases)! Slopes, steep, preserved as is, favouring natural drainage and the poor structure in surface, forcing the roots to search deep layers for minerals, helping increase the freshness, maintain the wines colours, aromas development and vines hygiene…

2- Winemaking
Tank fermented, at 28˚C to 30 ˚C, medium to long maceration average 18 to 25 days, with early autumn Malo-Lactic, mild filtration and stabilisation, very low sulphur content…
12 month ageing in French oak barrels, 1/3 new, 1/3 2nd wine, 1/3 3rd wine… Barreling from spring to spring!

Robe Deep purple with a violet fringe, clear, heavy body
Nose 1st nosing gamy, mineral, with sumac hints; 2nd nosing red fruits, cherry notes & blackcurrant…
Palate soft tannins structure, fresh with a sweet to bitter balance
4- Serving Temperature & Hints…
18˚C to 20˚C present better its tannins/ acidity structure. Big occasions and seasons wine, main courses companion, or simply with a nice Habanos!
5- Decanting
Recommended for some 50 min.
6- Food Pairing
Red meat and games grilled or in stew, hot Lebanese mezzé, strong cured cheeses…
7- Aging Potential
7 to 9 years in a cellar, to witness a good and continuous evolution.
