Quinoa, or the INCA grain, grows in altitudes above 3000m in Peru and Bolivia. It is not a true cereal since it belongs to the spinach family.
The Quinoa seed is an excellent source of complex carbohydrates and complete protein. It contains an almost perfect balance of all essential amino acids needed for tissue development in humans.
When cooked, Quinoa has a pleasant light fluffy texture and its mild, slightly nutty flavour makes it a very good alternative to rice and couscous.
