Aïn Bourdaï, Baalbeck Region, North Bekaa Hills at the Western Slopes of the Anti-Lebanon… Altitude 1500m (On average!) which slows maturity and optimizes the sugar / acidity balance… Major exposure South –Ouest; Soil shallow in the rocky spots, calcareous (lime stone), pebbles and clay in some plots! Isolated terroir which favours the organic feature, being very distant from other vine cultures (low contamination with parasites and diseases)! Slopes, steep, preserved as is, favouring natural drainage and the poor structure in surface, forcing the roots to search deep layers for minerals, helping increase the freshness, maintain the wines colours, aromas development and vines hygiene…

Pinot Noir 100% (7.000 vines) making this wine one of the unique Lebanese Rosés.
For a total quantity of 3.500 bottles…
2- Winemaking
A bleeding for some 6 hours, for the must and colour extraction! Clear must racking; Tank fermented, at low temperature average 15˚C to 17˚C, mild filtration and stabilisation, very low sulphur content…
3- Tasting Notes (Jan. 2023)
Robe light pomegranate, rose syrup, beautifully fresh and vibtant!
Nose Aromas of freshly picked strawberries, rose petals, confirming the robe.
Palate very appealing, light body, balanced acidity, fresh and peppery with lively crisp, mineral… consistent body, reminiscent of red cherries, texture and lasting juiciness…
4- Serving Temperature & Hints…
11˚C to present better its tannins/ acidity structure. Every day/ season wine, very pleasant aperitif
